Hi Jeni!

I want to make your “milkiest chocolate ice cream” features on David Lebovitz’s blog. Can I make the base and put it in the fridge overnight before processing it in the ice cream maker? Thanks!

Hi, Sara. That should be totally fine. Good luck!

Jeni, I love your recipes. We produce ice cream in a slightly larger vat. Approximately 500 gallons. What is the shelf life of the ice cream after you make it? Just curious. Do you ever use any stabilizers at all? The flavor of your ice cream is extraordinary.

Kept at the proper temperature, about a year unopened and about two weeks opened. No stabilizers.

One more question! Do you need a liquor license to make your alchohol ice creams?

Depends on the amount of alcohol and applicable laws.

Love love love the book! Quick question-if I use tapioca starch instead of corn starch, would I use the same amount? Thanks.

Hi Meghan, sorry for the long-overdue reply here. Jeni says: “It is 1:1 and the final result is indistinguishable.” For more recipe tips and clarification, check out the Forum: http://www.jenis.com/pages/Forum.html#/

Thanks!

I got to meet Jeni for the first time at the Fancy Food Show in San Francisco. What a treat! (No pun intended). If there’s a more driven, genuine, and compassionate person in the food business, please introduce me (but I don’t think you’ll find one). What a success story.

Keep on rockin’, Jeni!

Hi Jeni. I have a new all natural butter cream frosting that comes in a variety of flavors…its only preservative is the freezer. The cool part is you can frost 24 cupcakes in less than a minute. Neat! I have been trying to get my items to local markets but, have had no luck. I just can’t seem to submit the right information. I have another market chain interested in my product but, the submission guidelines seem overwhelming and ask questions I couldn’t begin to answer. Do you have any advise on finding a partner or do you ever chit chat one on one offering advise? Thanks a bunch!
